MENDOTA – Creative cooks were invited to try their hand at preparing dishes using sweet corn at the 11th annual Sweet Corn Festival Food Contest on Saturday, Aug. 11.
Eighteen entries ranging from Black Bean & Corn Burgers to Sweet Corn Cookies with Caramel Drizzle competed for the best dish. The tastiest recipe, winning Grand Prize, went to Shirley Prescott for her Del Monte Corn Fritters.
Sweet Corn Festival Queen, Payton Klatt chose Brooke Carroll’s Jalepeño Corn Dip as her favorite in Queen’s Choice. Tom Smith, SCF parade grand marshal chose Rich Cooper’s Football Season Muffins as his favorite in Grand Marshal’s Choice.
Carol Vaessen won Best Presentation with Corn & Bean Salsa. Amanda Coss won Most Creative with Sweet Corn Pocket Pies.
Judges for the contest were Tom Smith, SCF parade grand marshal; Payton Klatt, 2018 SCF Queen; Steve Villegas of Northern Partners; Connie See of Sullivan’s Foods; and Jolinda Christoffersen of Del Monte.
